Painters do so with an easel.
Symphony conductors do so in front of the orchestra.
Jazz and blues musicians do so (mostly).
Ministers do so behind a pulpit.
So why can't writers write standing up?
Sometimes I write standing up because I have too much energy to sit. (I have an adjustable-height computer desk) If I am on a roll, sitting drains that energy away. When I write like this, it's almost like I'm painting. I'll write a sentence or two, walk and pace around, consider what comes next, and paint another stroke or two. Composing and designing and drawing something I hope will be special.
